- 1 tbsp plus 1 teaspoon olive oil
- 4 flounder filets
- Salt and pepper to taste
- ⅓ cup Parmesan cheese, freshly grated
- ¼ cup Italian style seasoned bread crumbs
- 3 garlic cloves, minced
- 2 tbsps parsley, chopped
- 1 lemon, juice and zest
Preheat the oven to 350 F. Season the flounder filets with salt and pepper on both sides
On a plate, mix together the Parmesan cheese, bread crumbs, minced garlic, chopped parsley, lemon zest, salt and pepper to taste.
Dredge each filet in the Parmesan/bread crumb mixture until lightly breaded on both sides
Brush a baking sheet with one teaspoon of olive oil before placing the filets on it, and drizzle the remaining tablespoon of oil on top of the filets.
Squeeze the juice of half a lemon evenly on the filets and bake for 20 mins or until fully cooked
