Ingredients
  

  • 2 jalapeños
  • 2 cups cherry tomatoes
  • 1 white onion quartered
  • 1 tablespoon extra-virgin olive oil
  • 1 3/4 teaspoon kosher salt divided
  • Freshly ground black pepper
  • 3 tomatoes
  • 3 cloves garlic
  • 1/2 cup fresh cilantro
  • Juice of 1 lime
  • 1/2 teaspoon ground cumin
  • Pinch of red pepper flakes

Instructions
 

  • To make your salsa, start by roasting your vegetables. To roast your vegetables, toss them together with olive oil and ½ t of the kosher salt.
  • Place them on a baking sheet and roast in an oven that has been preheated to 400° for 20 minutes.
  • Next, blend the vegetables in a blender or food processor until the produce is chunky.
  • Season with the remaining ingredients and blend for a few more seconds to mix everything together.
  • For a spicier salsa, add more red pepper flakes.
  • Want it mild? Skip the red pepper flakes altogether. Serve your salsa warm or cool in the refrigerator until ready to serve.
