20ozspinach (preferably steam-in-bag for convenience)
1tbspbutter
¼ cuponion, minced
2garlic cloves, minced
½ cupmilk (I used 2%)
½ cupheavy cream
¼ cupwhite wine
6ozcream cheese, room temperature
⅛ tspnutmeg
½ tspred pepper flakes
½ cupparmesan cheese, freshly grated
Salt and freshly ground pepper
Instructions
Steam the spinach in the microwave and place it in a colander to remove the excess liquid. Once it cools down, squeeze it to remove as much liquid as you can
In a medium-sized saucepan or pot, melt the butter over medium heat and saute the minced onion and garlic until translucent. Add the white wine and simmer until reduced by half, about 3 minutes
Sprinkle in the nutmeg, red pepper flakes, salt and freshly ground pepper
Mix in the milk, heavy cream, and cream cheese. Cook until the cream cheese is melted, about 4-5 minutes
