Ingredients
  

  • 1/4 cup extra-virgin olive oil
  • 4 flounder fillets
  • Sea salt to taste
  • Black pepper to taste
  • 1/2 cup grated parmesan
  • 1/4 cup breadcrumbs
  • 4 cloves of minced garlic
  • 1 tbsp of lemon zest
  • 2 tbsp of lemon juice
  • For garnish- fresh chopped parsley optional

Instructions
 

  • Preheat the oven to 425° F and season the flounder fillets with salt and pepper on both sides.
  • In a shallow bowl, mix the breadcrumbs, parmesan, minced garlic, and lemon zest.
  • Dredge the fish in the mixture and press down to coat it.
  • Brush ½ of the olive oil onto your baking pan and place the fillets on the pan evenly.
  • Drizzle the remaining oil and lemon juice over the top of the fillets.
  • Bake for about 20 minutes, or until the fish is golden and flaky.
  • Garnish with chopped parsley on top.
