Take your cabbage and thinly slice and shred it until you have a cabbage that looks like it went through your paper shredder. Place all shredded cabbage in a bowl.
Next, take your carrots and grate them so they can easily mix into your cabbage. Place all shredded carrots in your bowl with the cabbage and mix thoroughly.
In a separate bowl pour a small amount of red wine or light apple cider vinegar. Also, add a dose of dijon mustard and mix well. This replaces the mayonnaise to offer a lighter dish.
When you are getting ready to serve mix the wet ingredients with your cabbage mix and toss.
