Instructions
Sauté Italian sausage either in a pan or directly in your instant pot for 3-5 minutes. The edges should be brown and fragrant, and you should be able to break the meat down easily with a spoon or fork
Add the garlic, onion, and oregano into the pot with the meat. Cook 2-3 minutes, stirring often until the onions are translucent.
Add in the broth and sun-dried tomatoes, as well as salt and pepper to your preference.
Set your instant pot to high pressure and cook the soup for 5-8 minutes
Re-set the pot to sauté mode and add in kale, stirring until wilted.
Additionally, stir in heavy cream for about 1 minute.
Serve with parmesan and parsley to garnish if desired!
