Ingredients
  

  • 1 pound 450g Hot Italian sausage
  • 1 large chopped onion
  • 3 cloves minced garlic
  • 1 tsp dried oregano
  • 1/2 c sun-dried tomatoes - drained and chopped
  • Salt and freshly ground black pepper
  • 6 c low-sodium chicken broth
  • 1 bunch kale
  • 3/4 c heavy whipping cream
  • 1/4 c freshly grated Parmesan
  • Fresh chopped parsley

Instructions
 

  • Sauté Italian sausage either in a pan or directly in your instant pot for 3-5 minutes. The edges should be brown and fragrant, and you should be able to break the meat down easily with a spoon or fork
  • Add the garlic, onion, and oregano into the pot with the meat. Cook 2-3 minutes, stirring often until the onions are translucent.
  • Add in the broth and sun-dried tomatoes, as well as salt and pepper to your preference.
  • Set your instant pot to high pressure and cook the soup for 5-8 minutes
  • Re-set the pot to sauté mode and add in kale, stirring until wilted.
  • Additionally, stir in heavy cream for about 1 minute.
  • Serve with parmesan and parsley to garnish if desired!
