Preheat your oven to 325°F. Use cooking spray to grease two mini fluted bundt pans.
In a large bowl, use an electric mixer to beat together the sugar, vegetable oil, eggs, and vanilla extract until smooth. Add the pumpkin puree and continue beating until the batter is well blended.
In another bowl, combine the all-purpose flour, salt, baking powder, baking soda, and ginger powder. Add the flour mixture to the pumpkin mixture until just mixed, then fold in the chocolate chips.
Pour the cake batter into the greased bundt pans. Bake for about 30 minutes or until a toothpick inserted into the center comes out clean.
