Ingredients
  

  • 1 c butter softened
  • Granulated erythritol equivalent to 1-1/2 cups granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 2-1/4 c all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 c sugar-free milk chocolate baking chips

Instructions
 

  • Preheat the oven to 350°.
  • In a large bowl add the butter and sugar substitute. Cream the butter and sugar substitute until it is light and fluffy, about 5-7 minutes.
  • Add in the eggs and vanilla extract. Keep mixing until combined.
  • In another medium or large bowl mix together the flour, baking soda, and salt.
  • Add the flour mixture to the creamed mixture 1 cup at a time. Mix until combined.
  • Stir in the chocolate chips.
  • Prepare a baking sheet by lining it with parchment paper.
  • Using a tablespoon, drop cookie dough in balls onto the baking sheet. Make sure they are about 2 inches apart.
  • Put the baking sheet with cookies into the oven and bake for 9-10 minutes or until they look golden-brown along the edges.
  • Remove the baking sheet from the oven and transfer the cookies to wire cooling racks.
  • Repeat the baking process as necessary until all cookie dough has been baked.
