In a soup pot, cook the sausage until fully cooked and caramelized. Next, add in both the onions and celery to cook until the vegetables are soft. Stir occasionally to prevent burning.
Add in a tablespoon of garlic (fresh or from a jar). Then, add the cider and continue to cook until it is almost reduced completely. Altogether, add chicken broth, potatoes, and seasonings (thyme and pepper make great additions) and bring the soup to a boil.
Once boiling, reduce heat to low and let it simmer until both the potatoes and sauerkraut are soft and tender.
The longer you let the soup simmer, the better it gets! Continue to taste and test, adding seasonings as you go until you love your soup pot.
