Ingredients
  

  • 8 bone-in chicken thighs about 3 pounds
  • 1/2 c salsa
  • 1/4 c creamy peanut butter
  • 2 tbsps lemon juice
  • 2 tbsps reduced-sodium soy sauce
  • 1 tbsp chopped seeded jalapeno pepper
  • 2 tsps Thai chili sauce
  • 1 garlic clove minced
  • 1 tsp minced fresh gingerroot
  • 2 green onions sliced
  • 2 tbsps sesame seeds toasted

Instructions
 

  • In a 3-quart slow cooker, place the chicken. Pour soy sauce, lemon juice, salsa, peanut butter, jalapeño, Thai chili sauce, ginger, and garlic over the chicken in a small bowl.
  • Cook on low for 5-6 hours, or until chicken is tender. Green onions with sesame seeds go on top. If preferred, serve with rice.
