½cup.frozen spinachdefrosted, drained, and squeezed
⅓cup.chopped artichoke hearts
1c.shredded mozzarella
Crushed red pepper flakes
4strips of baconeach sliced into 4 slices
2tablespoonextra-virgin olive oil
Instructions
First, set the oven to 400 and allow it to heat. Find a baking sheet and line it with foil. Then, take the chicken. Make slits in the top, widthwise. Take care to only cut through the top of the chicken, not all the way through. Season with salt and pepper, then put on the tray.
In a bowl, mix together half of the mozzarella, cream cheese, artichokes, and spinach. Add salt, pepper, and a pinch of paprika.
take the mixture and fill every other slice of the chicken. In the remaining slots, add a piece of bacon.
Add the rest of the mozzarella on top and drizzle the olive oil over everything.
Bake until done, which should take about 35 minutes.
