To prepare, you first need to bring the rice and water to a boil in a small saucepan. After, reduce the heat and cover the saucepan. Let the rice simmer for about 35 minutes until it is nice and tender.
While the rice is finishing up, preheat your oven to 350°. Once it’s ready, mix the rice with your corn, tomatoes, cheese, beans, salsa, sour cream, and pepper. Spray a baking dish with cooking spray and then
pour your mixture in. Top it with olives and onions before placing it in the oven.
Let your dish bake for 30 minutes. Take it out of the oven and cover with more cheese, then bake for another 5-10 minutes. You’ll know it’s ready when the cheese is melted and starting to brown. Let cool for 10 minutes and then enjoy!
