Ingredients
  

  • 1 14.5 ounce can chopped tomatoes
  • 4 tbsps plain yogurt
  • 2 cloves garlic
  • 1 1 inch piece ginger
  • 2 tbsps vegetable oil
  • 1 onion
  • 2 tbsps masala curry paste
  • 4 skinless boneless chicken breasts, cut into 1-inch pieces
  • salt and freshly ground black pepper to taste
  • ¼ c water
  • 1 tbsp all-purpose flour
  • 3 tbsps chopped fresh cilantro

Instructions
 

  • In a blender or food processor, combine the tomatoes, yogurt, garlic, and ginger. a process on high to combine everything evenly.
  • Set a large pan over high heat and add oil. Add in the onion and cook, stirring, till beginning to brown, about 3-4 minutes.
  • Add the curry paste to the pan and cook, stirring, till fragrant, about a minute. Add in the blended tomato mixture and stir to combine everything.
  • Add chicken to the pan and stir to combine. Add salt and pepper
  • Stir together the flour and water mixture in a bowl, then pour into the pan with the chicken and sauce. Bring the mixture to a boil then turn the heat down to low. Cook till the mixture is thickened and the chicken is cooked through about 15 minutes.
  • Take off the heat, and serve over rice sprinkled with cilantro
