Preheat your oven to 450 degrees
Wrap the pie shells in two layers of aluminum foil and bake for 8 minutes. Then remove the foil and bake the shells for 3 more minutes.
Take the shells out of the oven and reduce the heat to 350 degrees
Peel your pears and cut them into cubes, then place them in the pie shell
Mix the dry ingredients (flour, sugar, and nutmeg)
Using a whisk, mix the eggs, ¼ cup cream, butter, lemon zest, and vanilla into the dry mixture
Pour the entire mixture over the pears
.Place foil lightly over the edges of the pie and then bake for about 50 minutes, or until the filling is set. Give it a light shake and see if it’s jiggly. If so, it’s fully baked.
Cool for 1 hour and then refrigerate until serving
When you’re ready to serve the pie, whip together the remaining cream and cinnamon and place a dollop on each slice.
