Ingredients
  

  • 1 unbaked pie shell 9 inches
  • 4-1/2 c cubed peeled ripe pears about 2-1/2 pounds
  • 1 c sugar
  • 1/4 c all-purpose flour
  • 1/4 tsp ground nutmeg
  • 2 large eggs
  • 1 c heavy whipping cream divided
  • 1/4 c butter melted
  • 1 tsp grated lemon zest
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions
 

  • Preheat your oven to 450 degrees
  • Wrap the pie shells in two layers of aluminum foil and bake for 8 minutes. Then remove the foil and bake the shells for 3 more minutes.
  • Take the shells out of the oven and reduce the heat to 350 degrees
  • Peel your pears and cut them into cubes, then place them in the pie shell
  • Mix the dry ingredients (flour, sugar, and nutmeg)
  • Using a whisk, mix the eggs, ¼ cup cream, butter, lemon zest, and vanilla into the dry mixture
  • Pour the entire mixture over the pears
  • .Place foil lightly over the edges of the pie and then bake for about 50 minutes, or until the filling is set. Give it a light shake and see if it’s jiggly. If so, it’s fully baked.
  • Cool for 1 hour and then refrigerate until serving
  • When you’re ready to serve the pie, whip together the remaining cream and cinnamon and place a dollop on each slice.
