Preheat your oven to 350 degrees F (175 degrees C).
Line baking sheets with parchment paper or use a silicone baking mat so the cookies don’t stick.
Stir together the peanut butter, egg, and sugar. Mix these together until it’s smooth.
Using a small ice cream scoop or two tablespoons, drop spoonfuls of dough onto the prepared baking sheet.
Bake at 350 degrees F (175 degrees C) for 6 to 8 minutes. Be careful not to overbake!
These cookies are best when they are still soft and just barely brown on the bottoms, and due to the lack of flour, they can burn easily!
