Preheat the oven to 325° and line an 8"-x-8" baking dish with parchment paper with a 2" overhang.
Press the cookie dough as evenly as you can into the base of the baking dish.
Cover the dough with a layer of Oreos. Break and crumble them to cover the edges if needed!
In a medium-sized bowl, beat the cream cheese until smooth (you could use a spoon but to make your life easier, use a handheld mixer if you have one).
Add the sugar, eggs, vanilla, and salt to the cream cheese and beat until smooth.
Pour the cream cheese mixture over the Oreos, making sure to smooth the top with the back of a spatula.
Break the remaining Oreos with your hands and sprinkle the pieces over the cheesecake layer before placing them into the oven for around 30-35 minutes.
Refrigerate until chilled and drizzle with caramel sauce before serving for extra yum.
