Ingredients
  

  • 1 16.5-oz. log refrigerated chocolate chip cookie dough (such as Pillsbury)
  • 2 8-oz. blocks cream cheese
  • 1/2 cup. granulated sugar
  • 2 large eggs
  • 1/2 teaspoon. pure vanilla extract
  • 20 Oreo cookies
  • Pinch of kosher salt
  • Warm caramel

Instructions
 

  • Preheat the oven to 325° and line an 8"-x-8" baking dish with parchment paper with a 2" overhang.
  • Press the cookie dough as evenly as you can into the base of the baking dish.
  • Cover the dough with a layer of Oreos. Break and crumble them to cover the edges if needed!
  • In a medium-sized bowl, beat the cream cheese until smooth (you could use a spoon but to make your life easier, use a handheld mixer if you have one).
  • Add the sugar, eggs, vanilla, and salt to the cream cheese and beat until smooth.
  • Pour the cream cheese mixture over the Oreos, making sure to smooth the top with the back of a spatula.
  • Break the remaining Oreos with your hands and sprinkle the pieces over the cheesecake layer before placing them into the oven for around 30-35 minutes.
  • Refrigerate until chilled and drizzle with caramel sauce before serving for extra yum.
