Instructions
Add your rice and water to a medium saucepan and bring to a boil
Reduce heat and simmer until the rice has absorbed most of the liquid. The rice will be tender in about 40 minutes
While the rice is cooking, whisk together the vinegar, seasonings, and basil; drizzle the oil in a while whisking
Put the spinach in a large bowl
Add the rice, tomatoes, onions and the dressing
Mix together until all ingredients are combined with the spinach
Gently stir the feta cheese into the salad and chill for at least 2 hours before serving
