Instructions
Boil your potatoes until tender, then drain and mash.
Place 2 cups of mashed potato in a mixing bowl and add salt and egg, stir until combined.
Add the flour and beat until you have an elastic dough.
Turn out onto a floured board, knead 15 times then roll into ropes about ½ inch wide.
Cut into 1-inch pieces and press onto a gnocchi board or make groves in dumplings with a fork.
To cook: Add gnocchi to boiling water and boil until dumplings float to the top.
Cook in batches and remove with a slotted spoon
