Instructions
Choose 4 large baking potatoes. Pierce with a fork and bake in a preheated oven for one hour. Cook bacon while potatoes are baking.
After allowing potatoes to cool, slice them in half lengthwise and scoop out the potato, saving the skins.
Mix the potato with the dairy ingredients and green onions. Salt and pepper to taste.`
Fill the skins with the potato mixture, top with cheese, chopped bacon, and green onion or chives, and return to the oven.
Bake for 15 minutes until the cheese is melted and bubbly. Serve.
