Ingredients
  

  • 4 baking potatoes
  • ½ c milk
  • 1 c sour cream
  • 8 slices bacon
  • 1 c shredded Cheddar cheese divided
  • ½ tsp salt
  • 4 tbsps butter
  • ½ tsp pepper
  • 8 green onions sliced, divided

Instructions
 

  • Choose 4 large baking potatoes. Pierce with a fork and bake in a preheated oven for one hour. Cook bacon while potatoes are baking.
  • After allowing potatoes to cool, slice them in half lengthwise and scoop out the potato, saving the skins.
  • Mix the potato with the dairy ingredients and green onions. Salt and pepper to taste.`
  • Fill the skins with the potato mixture, top with cheese, chopped bacon, and green onion or chives, and return to the oven.
  • Bake for 15 minutes until the cheese is melted and bubbly. Serve.
