Once you have your ingredients, use confectioners' sugar to fill a 15 x 10 x 1 inch pan and smooth it with a wooden spoon handle.
Combine the sugar, water, and corn syrup in a large saucepan, bring the mixture to a boil and stir it occasionally.
Cover the pan and allow the mixture to cook for 3 minutes, or until sugar crystals are dissolved.
Uncover, cook on medium-high heat, do not stir.
When the candy thermometer reads 300 degrees Fahrenheit, remove the pan from the stove and stir in food coloring and extract flavoring.
Pour the mixture into a glass measuring container. You must work quickly and pour it off into the prepared pan.
Cover the candy mixture with confectioners' sugar and let it cool enough not to burn your fingers.
Then, cut the cooled candy into pieces with a knife or scissors. Be sure to store this candy in a covered jar.
