Add your potatoes to a pot, add water and bring to a boil. Once the water is at a boil, uncover and cook for about 8-12 minutes.
In a large pan, go ahead and heat up your oil, ginger, onions, and peppers, and stir until lightly browned. Add turmeric and cook for about a minute longer.
Simmer the veggie mixture and then add potatoes, along with other spices.
Cook for another five minutes, stirring as needed. Top with cilantro, then serve.
