Ingredients
  

  • 4 medium potatoes about 1-1/2 pounds
  • 2 tbsps canola oil
  • 1 medium onion
  • 1 jalapeno pepper
  • 1 tbsp minced fresh gingerroot

Instructions
 

  • Add your potatoes to a pot, add water and bring to a boil. Once the water is at a boil, uncover and cook for about 8-12 minutes.
  • In a large pan, go ahead and heat up your oil, ginger, onions, and peppers, and stir until lightly browned. Add turmeric and cook for about a minute longer.
  • Simmer the veggie mixture and then add potatoes, along with other spices.
  • Cook for another five minutes, stirring as needed. Top with cilantro, then serve.
