This yummy Sweet Potato and Egg Skillet is a one-pan dish that only requires a few steps. Below, you’ll find the directions so you can whip it up at home.
2medium sweet potatoespeeled and shredded (about 4 cups)
2tbspsbutter
1/8tspdried thyme
1garlic cloveminced
1/2tspsaltdivided
1/8tspcoarsely ground pepper
2cfresh baby spinach
4eggs
Instructions
Grab a large skillet and toss in butter. Once melted, add in the chopped sweet potato and ¼ tsp of salt. Cover the skillet and cook for about five minutes, stirring every once in a while. Then, add the spinach and cook for about two minutes until it’s wilted.
Using a spoon, hollow out four wells in the potatoes and crack an egg into each. Season each egg with salt and pepper. Cook on medium-low for about six minutes. You’ll know they’re ready when the whites are cooked through, but the yolk is slightly runny. Enjoy!
