Ingredients
  

For the cake:

  • 2 cups all-purpose flour;
  • 1 cup granulated sugar;
  • 1 tsp baking soda;
  • 1/2 tsp cinnamon;
  • 1/4 tsp salt;
  • 2 large eggs at room temperature;
  • 1 20 oz. can crushed pineapples with juice;
  • 2 tsp vanilla extract.

For the topping:

  • 1 cup light brown sugar;
  • 1 cup pecans chopped.

For the glaze:

  • 1 cup evaporated milk;
  • 1/2 cup granulated sugar;
  • 1/2 cup 1 stick unsalted butter;
  • 1 tsp vanilla extract.

Instructions
 

  • Preheat the oven to 350°F.
  • Stir together the dry ingredients for the cake using a hand whisk. Set aside.
  • In another bowl, whisk together eggs, crushed pineapple with juice, and vanilla extract. When done, slowly stir in the dry ingredients in a few additions.


  • Grease a 9x13-inch baking pan with non-stick cooking spray. Pour the batter. Set aside.
  • In a medium bowl, stir together light brown sugar and chopped pecans. Evenly sprinkle this mixture over the granny cake batter.
  • Bake for 40-50 minutes or until golden brown. Check for readiness with a toothpick, if it comes out clean - your easy granny cake is ready. Remove from the oven


  • Prepare the glaze. In a small saucepan, stir together evaporated milk, sugar, butter, and vanilla extract. Bring to a boil, stirring occasionally. Remove from the heat and set aside.
  • Poke holes all over the granny cake using a skewer. Then, evenly pour the glaze over the cake. Let it cool completely. Then, place in the refrigerator or slice and serve immediately!
