Preheat the oven to 350F.
In a large mixing bowl, mix together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
In another bowl, whisk together eggs, sugar, applesauce, vegetable oil, orange juice, orange zest, and vanilla extract. Pour it into the dry ingredients. Stir until combined, and no lumps of flour remain. Then, add zucchini and raisins (I used a mix of raisins, chopped walnuts, and pumpkin seeds that had in my pantry).
Grease a loaf pan with non-stick cooking spray and line it with parchment paper. Leave some paper hanging on both sides. It will help to remove the bread. Transfer the batter to the prepared loaf pan. Spread evenly.
Bake for 60 minutes or until ready. Check the readiness of the orange zucchini bread using a toothpick inserted in the center. If it comes out clean - the bread is ready.
While the bread is baking, prepare the orange glaze. In a bowl, combine powdered sugar, orange juice, and orange zest.
When the zucchini bread is ready, remove it from the oven and let it cool slightly (about 10 minutes). Then, remove the bread using the hanging paper.
Evenly pour the orange glaze over the cake. Let the cake cool to room temperature. Then, slice and enjoy!
