Ingredients
  

  • 1 egg
  • 3 tablespoons reduced-sodium soy sauce divided
  • 2 large boneless skinless chicken breasts cut in 1-inch dice
  • 2 tablespoons cornstarch
  • ¼ cup water
  • 2 tablespoons honey
  • 2 ½ tablespoons ketchup
  • 2 tablespoons sesame oil
  • Juice of ½ lime
  • Pinch of salt
  • Vegetable oil for frying
  • White rice
  • Sesame seeds and sliced green onions for garnish

Instructions
 

  • In a shallow dish, beat the egg with 2 tablespoons of soy sauce.
  • Add the chicken pieces into the egg/soy mixture plus 2 tablespoons of cornstarch. Mix everything well.
  • To make the sauce, pour the water into a small saucepan and add the honey, ketchup, sesame oil, lime juice, a pinch of salt, and remaining tablespoon of soy sauce. Stir and simmer for 10 minutes until slightly thick.
  • Heat the vegetable oil in a medium-sized skillet over medium-high heat. Fry the chicken pieces until brown. Transfer them to a plate lined with a paper towel.
  • Place the fried chicken pieces in a shallow dish and pour the thickened sauce over them. Mix until all the pieces are covered with sauce. Serve over white rice and top with sesame seeds and sliced green onions.
