Ingredients
  

  • 2- 15 oz cans of black beans drained and rinsed
  • 1 tablespoon olive oil
  • ½ cup onion minced
  • 2 garlic cloves minced
  • 1 cup carrots shredded
  • 1- 4 oz can green chiles
  • ½ cup quick-cooking oats
  • 2 tablespoons of soy sauce
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon coriander
  • ½ teaspoon chili powder
  • Salt and pepper to taste

Instructions
 

  • Using a medium-sized skillet, heat the olive oil over medium heat and saute the onions and garlic. Add the carrots, green chiles, cumin, paprika, coriander, chili powder, salt, and pepper. Cook until carrots are tender and there is almost no liquid left in the pan.
  • In a large bowl, mash the drained and rinsed black beans (do not mash them to a paste, leave some texture).
  • Add the carrot mixture, soy sauce, and oats to the mashed beans and mix well.
  • Divide mixture into 5-6 balls and form patties.
  • Place the patties in the freezer for about 20 minutes or until they are firm.
  • Spray a large skillet with cooking spray and cook the patties over medium-high heat until brown on both sides.
