Best Chicken Spaghetti Recipe

Who says pasta dishes can only be Italian? This creamy chicken spaghetti dish has a Tex-Mex influence and it’s delicious. Salsa, sour cream, and cream of chicken soup make up the sauce which is then mixed with cooked chicken and pasta and baked with a Mexican cheese blend on top. This white chicken spaghetti is the best!

Ingredients you’ll need:

  • Pasta: any long pasta of your choice, I used angel hair pasta
  • Cooked chicken: you can boil chicken breasts, or use leftover rotisserie chicken
  • Cream of chicken soup: 2 cans make the base for the sauce
  • Salsa: use one cup of your favorite brand. It can be mild, medium, or hot
  • Mexican crema: you can use sour cream, but I think Mexican crema has more flavor and I love its thinner consistency
  • Mexican cheese blend: you can use cheddar or your favorite shredded cheese
  • Taco seasoning: this provides most of the seasoning so you don’t have to think about adding spices
  • Fresh parsley: use it in the sauce and for garnish
  • Chicken broth: ¼ cup to make the sauce a bit lighter

How To Make It?

To make the best chicken spaghetti recipe, follow these easy instructions:

  1. Preheat the oven to 350 F. Cook the pasta according to the package instructions until al dente. Drain and reserve.
  2. In the same pot you cooked the pasta in, combine the cream of chicken soups, salsa, Mexican crema, chicken broth, one cup of shredded cheese, taco seasoning, and fresh parsley.
  3. Add the cooked chicken and pasta and toss everything until well combined.
  4. Spoon into a 9 x 13-inch casserole dish, top with the remaining cup of shredded cheese, cover with aluminum foil and bake for 25 minutes. Serve with fresh parsley on top.

Make-ahead Method:

If you want to make creamy chicken spaghetti ahead of time, I recommend you mix the ingredients for the sauce and add the cooked chicken, but cook the pasta just before placing it in the oven. Over time, pasta can soak up moisture from the sauce and become mushy, and this dish makes a lot of sauce!

Storage:

This is the best chicken spaghetti recipe, so I doubt you will have many leftovers, but if you do you can store them in an airtight container and in the fridge for up to 3 days. I would not recommend freezing this dish.

I enjoyed working with this recipe. I changed it up a little and cooked the chicken myself. Also after transferring it to the baking dish I added more cheese on the top. Very delicious!!

Used all the ingredients but just changed the method a little. Cooked the chicken in the crockpot with 1/2 the taco seasoning and the salsa. Shredded the chicken and put back in the crockpot with the juices and salsa. Dumped in rest of the taco seasoning & remaining ingredients along with the cooked spaghetti, then baked as directed - the chicken picked up a lot of flavor , was very good.

Outstanding casserole dish. Very easy to prepare. I added a little crushed red pepper flakes for a little added spice. Will definitely make it again.

This is delicious! I added spring onions, swapped the salsa for Rotel, used cilantro instead of parsley (because we love it) and used half a cup of the pasta water to thicken the mixture. (That’s also a good idea for spaghetti sauce; add .5 to 1 cup of pasta water to the sauce and it makes it silky and thicker!). Thanks so much for posting it! ❤️
