Ingredients
  

  • 1 lb chicken breasts, cut into 1 inch pieces
  • Salt and pepper to taste
  • ¼ cp cornstarch
  • Vegetable oil for frying
  • 4 garlic cloves, minced
  • 2 tsp freshly grated ginger
  • 1 tsp red pepper flakes

For the sauce:

  • 6 tbsp rice vinegar
  • 6 tbsp soy sauce
  • 3 tbsp brown sugar
  • 3 tbsp peach preserves
  • ¼ cp water
  • 1 tsp cornstarch

Instructions
 

  • Season the chicken cubes with salt and pepper. Place them inside a zipper bag along with the cornstarch and shake until all pieces of chicken are evenly coated.
  • In a small bowl, mix the sauce ingredients and set aside
  • Heat a large skillet over medium-high heat and add enough oil to cover ½ inch up the sides of the skillet.
  • Once the oil is hot, fry the chicken cubes until browned and crispy. Remove and set aside.
  • Discard half of the oil and add sautee the garlic, ginger, and red pepper flakes for about 30 seconds
  • Add the chicken back to the skillet and pour in the sauce
  • Cook everything together until the sauce thickens and the chicken is glazed. Serve over white rice
