Preheat oven to 420 degrees F.
Take chicken breast and cut into 1-inch cubes and place in a single layer along the bottom of a baking dish.
Add salt, pepper, paprika, cayenne, garlic powder, onion powder, instant chicken stock, and Italian seasoning into a bowl and mix thoroughly.
Sprinkle seasoning mix over chicken pieces and toss to coat evenly on all sides.
Take butter cubes and place evenly throughout the dish of chicken.
Bake for 8-10 minutes, remove from oven, and using tongs mix chicken around so it cooks evenly. Return to oven and roast for another 8-10 minutes, until chicken reaches an internal temperature of 165 degrees F and chicken is golden brown with crispy edges.
Sprinkle chicken pieces with chopped parsley and serve.
