12 Easy Chicken Pieces Recipes

Often when we’re cooking chicken, we get into a rut, and all we cook is plain chicken breast, and it can get boring. I wanted to gather a bunch of recipes that utilize different pieces of chicken with fun flavors to help you expand your chicken recipe repertoire!

12 Easy Chicken Pieces Recipes

There’s a chicken pieces recipe here for everyone: garlic, herbs, adobo, and many great flavor profiles here.

Chicken is a wonderful protein option to incorporate throughout the week. It’s lean, packed with nutrients, and when cooked properly, it’s moist and flavorful.

These chicken recipes are easy to turn into a completely balanced meal by adding fresh or roasted vegetables and some roasted potatoes, rice, or other starch.

Most of these are recipes are simple with small ingredient lists, proving that you don’t need a long ingredient list to have a flavor-filled dinner!

1. Garlic and Dijon Baked Chicken Legs

This easy recipe is the perfect way to kick off this list!

The Dijon mustard and lemon juice are the keys here, they add the perfect amount of acid, and the mustard brings that kick of spice. And can you ever go wrong with fresh garlic?

I love adding asparagus and potatoes to the same sheet I roast the chicken on so they soak up some of that awesome flavor.

You can also substitute the Dijon mustard for some whole grain mustard instead.

2. Lemon Herb Roasted Chicken and Potatoes

Lemon and fresh herbs are probably the easiest ways to add flavor that’s going to impress!

I love this chicken pieces recipe because it is so simple and tastes like you’re eating in a restaurant.

It proves that chicken can become a delicate and fancy meal with a straightforward presentation.

I love to serve this on top of mushroom risotto for a nice meal or some simple roasted potatoes and canned green beans for an easy dinner that’s still satisfying.

There’s nothing better than basic roasted chicken. It captures that comforting feeling we look for in good food.

3. Artichoke Chicken Recipe

Artichokes are one of my favorite vegetables to add to any recipe. They are packed with potassium, fiber, vitamin c, and magnesium, all nutrients our bodies love!

This recipe pairs artichokes with chicken drumsticks and flavorful ingredients like brown mustard and oregano to make the best chicken bake you could want!

I love to pair this with some wild rice and roasted green beans for a complete meal.

Pro tip: take the juices to the bottom of the pan and pour it over your rice to use up that great flavor!

4. Classic Oven Roasted Chicken Pieces

I love the spice blend used on the chicken in this recipe! Make a larger batch of it and use it on a range of different things: potatoes, veggies, steak, or fish.

Using the blend of paprika, garlic powder, and other spices on chicken pieces and roasting them until they are crispy and delicious makes for a wonderful dinner.

Don’t skip this recipe! I know it will become one of your new favorites and become a regular weekly dish you make.

5. Oven Fried Chicken

Who doesn’t love fried chicken? Fried chicken is a southern classic, and I think many of us could eat it every day of the week, but we all know deep-fried eating foods often isn’t great for our health.

Being able to capture that crispy chicken without having to deep fry? One of the best ideas ever!

The Bisquick mix acts as a batter and adds that crispy outer coating, and baking it at a high temperature guarantees a moist inside.

Serve this with your favorite fried chicken sides like mashed potatoes and sauteed leafy greens. Don’t forget the hot sauce!

6. Chicken Adobo

Here’s the thing, there are all sorts of affordable chicken cuts. You don’t have to use chicken breast!

Chicken pieces dinner recipes are some of my favorite ways to use those other chicken options.

This chicken adobo recipe is packed with flavors from brown sugar, vinegar, jalapeno, and soy sauce.

I love to eat this with a bowl of steamed brown rice and some diced avocado and corn, truly delightful!

7. Oven Baked Chicken Bites

This simple and easy chicken bite recipe relies on a scrumptious spice blend you make yourself.

This recipe uses the addition of olive oil that adds a fattiness and Italian flavor along with Italian seasoning and cayenne, which adds a wonderful spiciness that keeps you going back for more.

Like the previous spice blend on this list, I highly recommend making a large batch of this spice mix and using it on other things. It takes any roasted veggie from plain and boring to fun and tasty!

8. Oven Roasted Greek Chicken

The best breast recipes are ones that give you a marinade to impart flavor into your chicken before baking.

This recipe uses a yogurt-based marinade that adds a tanginess and serves as an acid to help tenderize your breast.

You want the skin on for this recipe. It will crisp up in the oven and give your chicken a great crunch.

Make sure you’re using plain yogurt here; you don’t want anything sweetened or flavored.

Serve this over some creamy mashed potatoes with a Greek cucumber and tomato salad on the side. Yum!

9. Baked Chicken Drumsticks

I love a baked drumstick! It’s one of my favorite chicken pieces recipes because it comes out crispy and juicy every time I make it.

This recipe comes together so quickly it’s great for a weeknight dinner.

Adding some paprika to the coating on the chicken results in a slightly smokey flavor that plays off the roasted chicken perfectly.

Pair it with some roasted veggies and rice and serve with some barbeque sauce on the side, and you have a finished dinner the whole family will love.

10. Oven Baked Rosemary Chicken

Rosemary is a great herb to use in combination with chicken. It’s a classic pairing for a reason!

Combine that with lemon, olive oil, and garlic, and you have a flavorful piece of chicken.

This recipe is great to turn into a sheet pan meal by adding your favorite veggies like eggplant or asparagus and a starchy vegetable like sweet potatoes or russet potatoes to the same tray. Let them all roast together with the chicken.

I love to serve this with some garlic aioli for dipping.

11. Oven Baked BBQ Chicken

Who doesn’t love barbeque chicken? This is a great recipe for a party or get-together and one of my favorite recipes with chicken pieces!

Everyone will be licking their fingers, asking for the recipe. Use your favorite barbeque sauce and ramp it up with some added lemon juice, brown sugar, paprika, and apple cider vinegar.

By marinating the chicken before cooking it, you allow those flavors to penetrate and tenderize the meat.

I love to cook these on the grill, but you can make them in the oven as well if you want BBQ chicken but don’t want to turn on the grill!

12. Roasted Greek Chicken Breasts

Greek flavors are so fresh, and I love to use them with chicken specifically.

This recipe uses lemon, fresh oregano and thyme, garlic, and red pepper flakes to give you that Greek acidic kick and all those herby flavors.

I don’t recommend skipping the fresh herbs here, but if you’re in a rush and only have dried herbs, they will work.

This recipe also calls for white balsamic vinegar. It’s like regular balsamic, but it’s slightly sweeter and, as the name suggests, white instead of deep red.

You can substitute regular balsamic here, but it will turn your chicken a purplish color, still tasty, though!
