I love to cook these on the grill, but you can make them in the oven as well if you want BBQ chicken but don’t want to turn on the grill!

I don’t recommend skipping the fresh herbs here, but if you’re in a rush and only have dried herbs, they will work.
This recipe also calls for white balsamic vinegar. It’s like regular balsamic, but it’s slightly sweeter and, as the name suggests, white instead of deep red.
You can substitute regular balsamic here, but it will turn your chicken a purplish color, still tasty, though!
- 1 lb (450g) chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 2 tbsp unsalted butter, diced
- 1/4 tsp fresh ground pepper
- 1/2 tsp paprika
- 1/8 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp Italian seasoning
- Fresh chopped parsley
- Preheat oven to 420 degrees F.
- Take chicken breast and cut into 1-inch cubes and place in a single layer along the bottom of a baking dish.
- Add salt, pepper, paprika, cayenne, garlic powder, onion powder, instant chicken stock, and Italian seasoning into a bowl and mix thoroughly.
- Sprinkle seasoning mix over chicken pieces and toss to coat evenly on all sides.
- Take butter cubes and place evenly throughout the dish of chicken.
- Bake for 8-10 minutes, remove from oven, and using tongs mix chicken around so it cooks evenly. Return to oven and roast for another 8-10 minutes, until chicken reaches an internal temperature of 165 degrees F and chicken is golden brown with crispy edges.
- Sprinkle chicken pieces with chopped parsley and serve.
