Often when we’re cooking chicken, we get into a rut, and all we cook is plain chicken breast, and it can get boring. I wanted to gather a bunch of recipes that utilize different pieces of chicken with fun flavors to help you expand your chicken recipe repertoire!

Chicken is a wonderful protein option to incorporate throughout the week. It’s lean, packed with nutrients, and when cooked properly, it’s moist and flavorful.

These chicken recipes are easy to turn into a completely balanced meal by adding fresh or roasted vegetables and some roasted potatoes, rice, or other starch.

Most of these are recipes are simple with small ingredient lists, proving that you don’t need a long ingredient list to have a flavor-filled dinner!

The Dijon mustard and lemon juice are the keys here, they add the perfect amount of acid, and the mustard brings that kick of spice. And can you ever go wrong with fresh garlic?

You can also substitute the Dijon mustard for some whole grain mustard instead.

Everyone will be licking their fingers, asking for the recipe. Use your favorite barbeque sauce and ramp it up with some added lemon juice, brown sugar, paprika, and apple cider vinegar.

By marinating the chicken before cooking it, you allow those flavors to penetrate and tenderize the meat.

I love to cook these on the grill, but you can make them in the oven as well if you want BBQ chicken but don’t want to turn on the grill!

12. Roasted Greek Chicken Breasts

Greek flavors are so fresh, and I love to use them with chicken specifically.

This recipe uses lemon, fresh oregano and thyme, garlic, and red pepper flakes to give you that Greek acidic kick and all those herby flavors.

I don’t recommend skipping the fresh herbs here, but if you’re in a rush and only have dried herbs, they will work.

This recipe also calls for white balsamic vinegar. It’s like regular balsamic, but it’s slightly sweeter and, as the name suggests, white instead of deep red.

You can substitute regular balsamic here, but it will turn your chicken a purplish color, still tasty, though!

Ingredients

  • 1 lb (450g) chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 2 tbsp unsalted butter, diced
  • 1/4 tsp fresh ground pepper
  • 1/2 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp Italian seasoning
  • Fresh chopped parsley

Instructions

    1. Preheat oven to 420 degrees F.
    2. Take chicken breast and cut into 1-inch cubes and place in a single layer along the bottom of a baking dish.
    3. Add salt, pepper, paprika, cayenne, garlic powder, onion powder, instant chicken stock, and Italian seasoning into a bowl and mix thoroughly.
    4. Sprinkle seasoning mix over chicken pieces and toss to coat evenly on all sides.
    5. Take butter cubes and place evenly throughout the dish of chicken.
    6. Bake for 8-10 minutes, remove from oven, and using tongs mix chicken around so it cooks evenly. Return to oven and roast for another 8-10 minutes, until chicken reaches an internal temperature of 165 degrees F and chicken is golden brown with crispy edges.
    7. Sprinkle chicken pieces with chopped parsley and serve.
