Get out your blue cheese, chives, and butter and mix them in a bowl, then set them to the side. Next, in a different bowl, mix your onion powder, garlic salt, black pepper, and cayenne pepper.
Get out your olive oil and cover your steak in a thin layer on each side. Now grab your spices in the bowl you put to the side and coat both sides of your meat with it. Be sure to rub them into the meat with your hands.
Apply some oil to your grill before placing your meat on the surface. Cook 10 to 15 minutes on each side, or until it's cooked to your liking. For best flavor, grill to rare or medium-rare. Remove the meat from the grill and cut in thin slices lengthwise. Drip some of the blue cheese butter on top and serve.
