Ingredients
  

  • package spaghetti
  • eggs beaten
  • onion diced
  • chopped baby bella crimini mushrooms
  • frozen peas
  • olive oil divided
  • shredded carrots
  • freshly grated Parmesan cheese
  • salt and ground black pepper to taste

Instructions
 

  • Bring water to a boil and cook ½ a package of spaghetti until al dente according to the directions on the box.
  • Scramble 4 eggs in a hot pan. Do not overcook them; it is best to let them finish in the pan.
  • Saute half an onion, ¼ cup mushroom, ¼ cup frozen peas, and ¼ cup shredded carrots until the onions are browned. Add the pasta and eggs to the mixture and mix well.
  • Sprinkle Parmesan cheese, salt, and pepper over the mixture, and then serve!
