Firstly, you’ll want to preheat your oven to 350 degrees. Arrange your two racks into even thirds inside your oven.
You’ll wash the potatoes next. Use cold water and a stiff brush to do so. When this is complete, poke holes into your potatoes, about 12 holes, using a fork. This will allow the moisture to leave during the cooking.
Put the potatoes in a large bowl or plate and coat them in the oil and kosher salt.
You’ll then transfer them to the middle of the oven on the top rack directly. Place a baking sheet underneath to catch any pieces or drippings that may fall through.
Leave the potatoes in the oven to bake for an hour. Or bake them until the skins are crisp and the insides are soft.
