Turn the grill on to medium heat and allow to heat fully.
Add beef, garlic, and hot sauce to a bowl. Slowly mix until evenly coated. Add salt and pepper to taste, and stir once. Do not overmix the mixture.
Fry bacon over medium heat in a frying pan or skillet. Remove bacon once cooked and place on a paper towel. Allow bacon to rest and the grease to absorb into the towel.
Do not drain bacon grease from the pan
Take a small amount of the bee mixture and fry it in the bacon grease. Allow to cool and taste test for seasoning. If needed, adjust seasoning.
Once the mixture has passed the taste test, form the mixture into 8 patties. Keep these patties thin and even. Set on parchment paper.
In the bacon fat, sauté onions until translucent. Do not overcook the onions. This step usually takes 3-5 minutes.
Add onions to a bowl with cheese. Chop bacon and add to the bowl.
Using a spoon, scoop the bacon, cheese, and onion mixture into the center of half the patties.
Take the remaining half of the patties and top the halves with the mixture in the center.
Use your hands to seal the edges of each patty.
Add patties one by one to bacon grease, and continue to cook skillet on medium heat. Flip once, when the desired level of doneness is achieved.
Usually, this will take 4 minutes on each side.
Remove burgers from the frying pan and place them on buns. Add desired toppings and condiments and enjoy!
