Cover and microwave the rice for about 1 minute. Divide the rice in half and spread each half on a sheet of nori.
Lay half the veggies on each bed of rice, and carefully roll up your sushi. Cool completely in the refrigerator before cutting and serving.
Notes
To spice things up, you can serve with wasabi, spicy mayo, soy sauce, or tamari. Plus, vegan cream cheese and avocado also make excellent fillings and are very easy to prepare and add-in! Enjoy!
