Ingredients
  

  • 3 eggs
  • 1 ¼ c milk
  • ¾ c all-purpose flour
  • 1 tbsp white sugar
  • ½ tsp salt
  • 1 tbsp butter or as needed

Instructions
 

  • In a small bowl, combine your flour, sugar, and salt.
  • In a larger bowl, beat the eggs for about 4 minutes.
  • Stir in the milk
  • Mix your dry ingredients into your eggs + milk, and beat until you have a completely smooth batter. Use a strainer to remove any stubborn lumps.
  • Melt butter onto a griddle at medium heat. Drop a tablespoon of batter onto the griddle, and then spread it out so that you have a round thin pancake. Cook multiple pancakes at once if you have room.
  • After 1-2 minutes, use a spatula to carefully flip the pancake. Then cook for another 1-2 minutes until it’s golden brown.
  • Repeat with your remaining batter
  • Serve warm with your favourite toppings, or store for later
