In a small bowl, combine your flour, sugar, and salt.
In a larger bowl, beat the eggs for about 4 minutes.
Stir in the milk
Mix your dry ingredients into your eggs + milk, and beat until you have a completely smooth batter. Use a strainer to remove any stubborn lumps.
Melt butter onto a griddle at medium heat. Drop a tablespoon of batter onto the griddle, and then spread it out so that you have a round thin pancake. Cook multiple pancakes at once if you have room.
After 1-2 minutes, use a spatula to carefully flip the pancake. Then cook for another 1-2 minutes until it’s golden brown.
Repeat with your remaining batter
Serve warm with your favourite toppings, or store for later
