Instructions
Flatten chicken with a meat hammer or rolling pin. You want the chicken cutlets to be about ¼ inch thick.
Gently beat egg white in a shallow bowl or pie dish.
Mix pecans, flour, salt and pepper in another shallow bowl or pie dish.
Dip chicken in egg white. Be sure to coat thoroughly.
Next, gently lay the chicken in flour mix and coat thoroughly.
Do this for each piece of chicken. Let the chicken sit for 5 minutes.
Melt butter in oil in a large pan or skillet over medium heat.
Brown the chicken in the pan for 4-6 minutes on each side.
