Ingredients
  

  • 4 boneless skinless chicken breast halves 6 oz each
  • 1 large egg white
  • 3/4 c finely chopped pecans
  • 3 tbsps all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp butter
  • 1 tbsp canola oil

Instructions
 

  • Flatten chicken with a meat hammer or rolling pin. You want the chicken cutlets to be about ¼ inch thick.
  • Gently beat egg white in a shallow bowl or pie dish.
  • Mix pecans, flour, salt and pepper in another shallow bowl or pie dish.
  • Dip chicken in egg white. Be sure to coat thoroughly.
  • Next, gently lay the chicken in flour mix and coat thoroughly.
  • Do this for each piece of chicken. Let the chicken sit for 5 minutes.
  • Melt butter in oil in a large pan or skillet over medium heat.
  • Brown the chicken in the pan for 4-6 minutes on each side.
