Season chicken with salt and pepper.
In a slow cooker, combine chicken stock, dried parsley, dill, chives, onion powder, and garlic powder.
Add chicken and stir to coat it in the broth and seasonings.
Cook on low for 6-8 hours or on high for 2-4 hours, and then shred the chicken with a fork.
Stir in cream cheese, half the bacon, and 3/4 of the cheddar cheese. Transfer to a serving dish, then top with remaining cheddar cheese, crumbled bacon, and chives.
