Heat oil in a skillet in medium heat. Season chicken with salt, pepper, and oregano and add to the skillet. Cook chicken for 8 minutes on each side until golden. Remove the chicken and set it aside to rest.
In the same skillet, keep on medium heat and add butter. Allow butter to melt before adding garlic. Cook for 1 minute. Stir in cherry tomatoes and cook until the beginning to burst and the skin looks wrinkled. Season with salt and pepper. Add spinach and stir until the spinach begins to wilt.
Add heavy cream and Parmesan before bringing the mixture to a simmer. Once achieved, reduce heat to low and allow the sauce to
simmer until reduced to the ideal texture. This will take about 3-5 minutes. Add the cooked chicken and allow 5-7 minutes for the chicken to warm in the sauce.
Remove your creamy Tuscan chicken onto a plate and serve with lemon wedges.
