Preheat the oven to 350 degrees and line a muffin tin with 12 cupcake liners.

Place a vanilla wafer in the bottom of each cupcake liner.

Place the cream cheese in a bowl and beat it until fluffy.

Pour the eggs, lemon juice, and sugar into the bowl and beat until combined and creamy.

Fill each cupcake liner about 2/3 full with the mixture.

Bake for 15-17 minutes then cool completely.

Spoon pie filling over each cheesecake.
If desired, pipe whipped cream atop each cheesecake before serving.
