Ingredients

  • 12 vanilla wafers
  • 2 (8 oz) softened packages cream cheese
  • 2 large eggs
  • 2 tbsps lemon juice
  • ⅔ c white sugar
  • 1 (21 oz) can cherry pie filling

Instructions

  1. Preheat the oven to 350 degrees and line a muffin tin with 12 cupcake liners.
  2. Place a vanilla wafer in the bottom of each cupcake liner.
  3. Place the cream cheese in a bowl and beat it until fluffy.
  4. Pour the eggs, lemon juice, and sugar into the bowl and beat until combined and creamy.
  5. Fill each cupcake liner about 2/3 full with the mixture.
  6. Bake for 15-17 minutes then cool completely.
  7. Spoon pie filling over each cheesecake.
    If desired, pipe whipped cream atop each cheesecake before serving.
