Ingredients
  

For the cupcakes:

  • 1 box white cake mix (I used Pillsburry)
  • 1 cup water
  • ½ cup oil
  • 3 eggs
  • 1 tablespoon lemon zest
  • 20 strawberries, timmed

For the frosting:

  • 2 sticks butter, softened
  • 3 ½ cups confectioner’s sugar, divided
  • ¼ cup freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 4-5 drops of red food coloring
  • Lemon and strawberry slices for garnish

Instructions
 

Make the muffins

  • Preheat the oven to 350 F.
  • Using a handheld mixer, beat together the cake mix, water, oil, eggs, and lemon zest until smooth
  • Line two muffin pans with 20 muffin liners and divide the batter evenly between them
  • Press a strawberry into the batter of each muffin tin
  • Bake for 20 minutes until golden brown. Let cool completely

Make the frosting:

  • Mix the butter, lemon juice, confectioner’s sugar, and lemon zest until smooth
  • Add 4-5 drops of red food coloring until you get the desired shade of pink
  • Pipe the frosting over the cooled cupcakes and decorate with lemon and strawberry slices.
