Ingredients
For the cupcakes:
- 1 box white cake mix (I used Pillsburry)
- 1 cup water
- ½ cup oil
- 3 eggs
- 1 tablespoon lemon zest
- 20 strawberries, timmed
For the frosting:
- 2 sticks butter, softened
- 3 ½ cups confectioner’s sugar, divided
- ¼ cup freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 4-5 drops of red food coloring
- Lemon and strawberry slices for garnish
Instructions
Make the muffins
- Preheat the oven to 350 F.
- Using a handheld mixer, beat together the cake mix, water, oil, eggs, and lemon zest until smooth
- Line two muffin pans with 20 muffin liners and divide the batter evenly between them
- Press a strawberry into the batter of each muffin tin
- Bake for 20 minutes until golden brown. Let cool completely
Make the frosting:
- Mix the butter, lemon juice, confectioner’s sugar, and lemon zest until smooth
- Add 4-5 drops of red food coloring until you get the desired shade of pink
