Ingredients
  

  • 5 lbs Yukon Gold potatoes
  • ½ c butter
  • 2 c Parmesan cheese
  • 1 c chopped fresh chives
  • 1 ½ c cream cheese
  • ½ medium head garlic peeled and minced
  • 1 pinch salt and pepper to taste

Instructions
 

  • Fill a large pot with salted water and bring to a boil.
  • Peel and chop potatoes into similar-sized chunks.
  • Add the potatoes to the boiling water, and cook until tender but still firm.
  • Drain the potatoes and return to the pot on the stovetop to dry for a couple of minutes.
  • Add butter, cream cheese, parmesan cheese, chives, garlic, salt, and
    pepper to the pot of potatoes.
  • Mash until creamy and blended well.
  • Garnish and serve.
