Ingredients
  

  • 1 ½ c elbow macaroni
  • cooking spray
  • 1 tbsps olive oil
  • 1 tbsps all-purpose flour
  • ½ c cauliflower florets
  • ½ 8 oz package cream cheese
  • 1 ½ c shredded Cheddar cheese
  • ½ c milk
  • ½ tsp salt
  • tsp round black pepper

Instructions
 

  • Boil your elbow pasta and steam your cauliflower florets until soft. Drain.
  • Placed cooked cauliflower into a blender and blend until smooth
  • Make a roux with flour and oil in a saucepan over medium heat
  • Add milk and stir until the mixture thickens
  • Mix in the cheese and cream cheese, salt, and pepper along with the blended cauliflower
  • Add the cooked pasta and stir to coat.
