Ingredients
  

  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1 tbsp tomato paste
  • 1 lb brown Baby Bella mushrooms, washed and patted dry
  • 1 cup grape tomatoes, halved
  • ½ cup heavy cream (¾ if you want to make more sauce to eat with pasta)
  • ¼ cup parmesan cheese, grated
  • ½ tsp Italian seasoning
  • ¼ tsp red pepper flakes
  • 3 cups baby spinach
  • Salt and pepper to taste

Instructions
 

  • Melt the butter in a large skillet over medium heat. Mix in the tomato paste and minced garlic, and cook for about thirty seconds to a minute until fragrant
  • Add the mushrooms and tomatoes and cook them for about 5 minutes until tender
  • Pour in the heavy cream and add the grated parmesan cheese, Italian seasoning, red pepper flakes, salt, and pepper to taste. Simmer for about 3 minutes
  • Mix in the spinach leaves and cook until wilted. Serve warm
