1lbbrown Baby Bella mushrooms, washed and patted dry
1cupgrape tomatoes, halved
½ cupheavy cream (¾ if you want to make more sauce to eat with pasta)
¼ cupparmesan cheese, grated
½ tspItalian seasoning
¼ tspred pepper flakes
3cupsbaby spinach
Salt and pepper to taste
Instructions
Melt the butter in a large skillet over medium heat. Mix in the tomato paste and minced garlic, and cook for about thirty seconds to a minute until fragrant
Add the mushrooms and tomatoes and cook them for about 5 minutes until tender
Pour in the heavy cream and add the grated parmesan cheese, Italian seasoning, red pepper flakes, salt, and pepper to taste. Simmer for about 3 minutes
Mix in the spinach leaves and cook until wilted. Serve warm
