Ingredients
  

  • 6 oz fettuccine pasta
  • 3 boneless, skinless chicken breasts
  • tsp Cajun seasoning (or to taste)
  • 2 tbsp butter
  • 1 tbsp olive oil, divided
  • ½ cp onion, chopped
  • 2 garlic cloves, minced
  • 1 cp heavy whipping cream
  • ¼ cp sun-dried tomatoes, chopped
  • 2 green onions, sliced plus more for garnish
  • ½ tsp dried basil
  • ½ tsp dried parsley
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese

Instructions
 

  • Cook 6 oz of fettuccine according to package instructions, drain, and keep warm (reserve ¼ cup of pasta cooking water). While the pasta is cooking, cook the chicken and make the sauce. Season the chicken breasts with two teaspoons of Cajun seasoning, salt, and pepper.
  • Heat two tablespoons of butter and ½ tablespoon of olive oil in a large skillet over medium-high heat, and brown the chicken breasts on both sides, cooking them for three minutes per side until cooked through. Transfer to a plate and keep warm.
  • Add ½ tablespoon of oil to the same skillet and saute ½ cup of chopped onion and two minced garlic cloves until translucent, about two minutes. Make sure to scrape the bottom of the pan to dissolve all the bits and pieces stuck to it.
  • Pour in one cup of heavy whipping cream and add ¼ cup chopped sun-dried tomatoes, two sliced green onions, ½ teaspoon each dried basil, parsley, and cajun seasoning. Season with salt and pepper and cook until slightly thick.
  • Slice the chicken breasts and add them to the skillet with the sauce, along with the drained pasta. Cook for one more minute until heated through and serve with grated parmesan cheese and additional sliced green onions on top. If you feel the sauce is too thick, gradually add the pasta cooking water until it reaches your desired consistency.
