How To Make Cajun Chicken Pasta?
Making this creamy chicken pasta recipe is very easy and quick.
- Cook 6 oz of fettuccine according to package instructions, drain, and keep warm (reserve ¼ cup of pasta cooking water).
- While the pasta is cooking, cook the chicken and make the sauce.
- Season the chicken breasts with two teaspoons of Cajun seasoning, salt, and pepper.
- Heat two tablespoons of butter and ½ tablespoon of olive oil in a large skillet over medium-high heat, and brown the chicken breasts on both sides, cooking them for three minutes per side until cooked through. Transfer to a plate and keep warm.
- Add ½ tablespoon of oil to the same skillet and saute ½ cup of chopped onion and two minced garlic cloves until translucent, about a minute.
- Pour in one cup of heavy whipping cream, and add ¼ cup chopped sun-dried tomatoes, two sliced green onions, and ½ teaspoon each of dried basil, parsley, and cajun seasoning.
- Season with salt and pepper and simmer until slightly thick, about 2-3 minutes.
- Slice the chicken breasts and add them to the skillet with the sauce, along with the drained pasta. Cook for one more minute until heated through and serve with grated parmesan cheese and additional sliced green onions on top. If you feel the sauce is too thick, gradually add the reserved pasta cooking water until it reaches your desired consistency.
How To Reheat Creamy Cajun Chicken Pasta?
Creamy pasta dishes tend to dry out a bit when they cool down. Before placing your leftovers in the microwave or stovetop, add a tablespoon of water or milk to them. This will make the sauce thin out a bit. Depending on the amount of pasta you are reheating, add more or less liquid.
Can I Freeze Cajun Chicken Pasta?
You can. Place it in an airtight container or freezer bag and into the freezer for up to three months. Let it thaw completely and add a bit of liquid to it to thin out the sauce before reheating it.
