Ingredients
  

  • 1 pound boneless and skinless chicken breasts cubed
  • 1 pound potatoes cubed;
  • 3 tbsp olive oil;
  • 3 tbsp unsalted butter melted;
  • 1 tsp smoked paprika;
  • 1 tsp garlic powder;
  • ½ tsp crushed red chili flakes;
  • ¼ tsp cumin;
  • salt to taste;
  • pepper to taste;
  • 1 1/2 cups shredded Colby Jack cheese divided;
  • 8 slices bacon cooked and crumbled;
  • ½ cup green onion chopped.

Instructions
 

  • Preheat the oven to 400 F. Spray a 9x13-inch baking dish with non-stick cooking spray. Cut chicken breasts into bite-sized cubes. Add to a large bowl.


  • Wash the potatoes and cut them into cubes. Add to the bowl with the cubed chicken.


  • In a small bowl, combine olive oil, melted butter, smoked paprika, garlic powder, crushed red chili flakes, cumin, salt, and pepper.
  • Pour over cubed chicken and potatoes. Stir until all pieces are covered with the olive oil mixture.


  • Transfer to the prepared baking dish. Spread evenly. Bake for 45-55 minutes, stirring every 10-15 minutes.


  • When chicken and potatoes are cooked completely, remove them from the oven.


  • Sprinkle half of the cheese.


  • Top with bacon crumbs.


  • Then, add green onions.


  • Top with the remaining shredded Colby Jack cheese. Bake for 5-10 minutes more until the cheese melts. Enjoy!
