Loaded Chicken and Potato Casserole

- 1 pound boneless and skinless chicken breasts cubed
- 1 pound potatoes cubed;
- 3 tbsp olive oil;
- 3 tbsp unsalted butter melted;
- 1 tsp smoked paprika;
- 1 tsp garlic powder;
- ½ tsp crushed red chili flakes;
- ¼ tsp cumin;
- salt to taste;
- pepper to taste;
- 1 1/2 cups shredded Colby Jack cheese divided;
- 8 slices bacon cooked and crumbled;
- ½ cup green onion chopped.
Preheat the oven to 400 F. Spray a 9x13-inch baking dish with non-stick cooking spray. Cut chicken breasts into bite-sized cubes. Add to a large bowl.
Wash the potatoes and cut them into cubes. Add to the bowl with the cubed chicken.
In a small bowl, combine olive oil, melted butter, smoked paprika, garlic powder, crushed red chili flakes, cumin, salt, and pepper.
Pour over cubed chicken and potatoes. Stir until all pieces are covered with the olive oil mixture.
Transfer to the prepared baking dish. Spread evenly. Bake for 45-55 minutes, stirring every 10-15 minutes.
When chicken and potatoes are cooked completely, remove them from the oven.
Sprinkle half of the cheese.
Top with bacon crumbs.
Then, add green onions.
Top with the remaining shredded Colby Jack cheese. Bake for 5-10 minutes more until the cheese melts. Enjoy!
