Cook the noodles according to the package instructions. Save ½ cup of the cooking water, drain, and keep warm.
While the noodles are cooking, melt the butter in a large skillet and saute the onion and garlic until translucent and slightly brown.
Add the cooked noodles, cottage cheese, sour cream, and pasta cooking water to the skillet with the onion/garlic mixture and cook for a couple of minutes until well combined.
Check the seasoning and add salt if needed. Serve with freshly ground pepper and chopped parsley on top.
