Polish Noodles (Cottage Cheese and Noodles)

Ingredients
  

  • 4 tbsp salted butter
  • 1 cp onion, chopped
  • 2 garlic cloves, minced
  • 1-16 oz package egg noodles
  • 1-16 oz container cottage cheese
  • 1-8 oz container sour cream
  • Salt and freshly ground pepper
  • 2 tbsp chopped parsley

Instructions
 

  • Cook the noodles according to the package instructions. Save ½ cup of the cooking water, drain, and keep warm.
  • While the noodles are cooking, melt the butter in a large skillet and saute the onion and garlic until translucent and slightly brown.
  • Add the cooked noodles, cottage cheese, sour cream, and pasta cooking water to the skillet with the onion/garlic mixture and cook for a couple of minutes until well combined.
  • Check the seasoning and add salt if needed. Serve with freshly ground pepper and chopped parsley on top.
