Ingredients

  • 8 oz uncooked penne pasta
  • 1 lb boneless skinless chicken breasts, cut into 1/2-inch pieces
  • 1 small green pepper, julienned
  • 1/2 c chopped onion
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 c sliced fresh mushrooms
  • 1 c halved cherry or grape tomatoes
  • 1 can (8 oz) pizza sauce
  • 1/2 tsp Italian seasoning
  • 1/3 c shredded part-skim mozzarella cheese

Instructions

  1. Boil a saucepan of water with a pinch of salt. Once boiling, add the penne pasta to the saucepan and cook for 10 to 13 minutes.
  2. While the pasta is cooking, in a wok, you want to mix and cook the other ingredients together, the chicken, pepper, onion, garlic and oil. Keep stirring the mixture until the chicken is fully cooked throughout.
  3. Once the pasta is fully cooked, drain the water and add the pasta to the wok.
  4. You can then add the mushrooms, tomatoes, sauce and seasoning to the wok mixture and cook for around 5 minutes
  5. Add a sprinkle of cheesy on top for that cheesy texture
