- 8 oz uncooked penne pasta
- 1 lb boneless skinless chicken breasts, cut into 1/2-inch pieces

- 1/2 c chopped onion
- 1 garlic clove, minced
- 1 tbsp olive oil
- 1 c sliced fresh mushrooms
- 1 c halved cherry or grape tomatoes
- 1 can (8 oz) pizza sauce
- 1/2 tsp Italian seasoning
- 1/3 c shredded part-skim mozzarella cheese
- Boil a saucepan of water with a pinch of salt. Once boiling, add the penne pasta to the saucepan and cook for 10 to 13 minutes.
- While the pasta is cooking, in a wok, you want to mix and cook the other ingredients together, the chicken, pepper, onion, garlic and oil. Keep stirring the mixture until the chicken is fully cooked throughout.
- Once the pasta is fully cooked, drain the water and add the pasta to the wok.
- You can then add the mushrooms, tomatoes, sauce and seasoning to the wok mixture and cook for around 5 minutes
